Banana Breakfast with Oats, Wheat Germ, Walnuts

Looking for a warm delicious nutritious breakfast?

Good Morning.  Now that I’m back to an exercise routine, I’ve been needing a little extra Oomph in my breakfast.  Here is a yummy recipe I found on MyRecipes.com   I’m loving the simplicity of the whole grains that provide the nutrition you need to jump start your day.  I added Walnuts to add some additional heart healthy Omega 3 fatty acids to my diet.  You could also add some additional  ground flax-seed -1Tbsp each bowl is welcomed (another one of my favorite ingredients to sneak in my kids food often)

I’m still working on my picky kids to eat walnuts…patience.  I didn’t like them as a kid either so I get it.

Banana Breakfast with Oats and Wheat Germ

Prep Time: 4 minutes

Cook Time: 6 minutes

Warm bowl of yummy. Whole grains from the oats and wheat germ provide nutrients: vitamin E, iron, potassium, and folic acid. Potassium from the bananas and adding walnuts is great because they have high levels of omega-3 fatty acids that other nuts don't.

This is a Diva Dietitian Recipe Restyle. Original recipe from myrecipes.com, Maureen Callahan, Cooking Light JANUARY 2010

Ingredients

  • 3 3/4 cups water
  • 1 cup old-fashioned rolled oats
  • 2/3 cup toasted wheat germ
  • 1/4 teaspoon salt (optional)
  • 1 1/2 cups sliced banana (about 2)
  • 3 tablespoons brown sugar (about 1 Tbs each bowl)
  • 1 Tablespoon ground flax seed (1 tablespoon butter in original recipe)
  • Top with Walnuts (optional)

Instructions

  1. Combine the first 4 ingredients in a medium saucepan, and bring to a boil over high heat, stirring occasionally.
  2. Reduce heat to medium-low, and cook for 6 minutes or until thick and thoroughly heated, stirring occasionally.
  3. Remove from heat. Divide cereal evenly among 3 bowls.
  4. Top each serving with 1/2 cup banana, 1 tablespoon brown sugar, and a little ground flax seed.
  5. AND my addition- Walnuts (optional)

    That is certainly a tasty breakfast!

    But 3 tablespoons of brown sugar?!! That is so much! Plus the butter seems unnecessary too.

    I have a wheat germ website so I know all the health benefits wheat germ has. It really is great stuff.

    Cut out the sugar and butter and you’ve got a pretty awesome (healthy) breakfast!

    • Thanks for catching that butter on the list. I actually replaced the butter with 1 Tbsp of ground flax seed, the original recipe from myrecipes.com had butter & at 3:00 in the morning it was an overlook on my part listing my replacement. Thanks for helping me edit :) As far as the sugar, it was only 1 Tablespoon sprinkled over each bowl.
