Flax Jacks

Pancakes are one of those foods that are so easy to make ourselves vs. using the box pancake mixes you buy at the store.   And the benefits of making them yourself is you know exactly what went into them.   Last year, I set out on a mission to find the perfect pancake recipe.  I did find one I liked, but of course I had to put it through a few fabulous & healthy changes- a Recipe Restyle!  My husband and kids were troopers every Sunday for about 4 weeks.   And trust me we had a few not so yummy pancake mornings.   Here is what I came up with and everyone LOVES them.

I doubled the below recipe yesterday morning so we had a few extra that I could put in the freezer to heat up for them this week before school..

 

Flax Jacks:
1 1/2 Cups All-Purpose Flour
3 1/2 teaspoons baking powder
1 Tablespoon of Sugar
1 1/2 Tablespoons Ground Flax Seed
1 teaspoon Vanilla
1 1/3 Cups Milk
1 egg
2 Tablespoons of salted butter

Serve with Maple Syrup and/or fresh fruit i.e. strawberries, raspberries,blueberries.

Mix together flour, baking powder & sugar.  Make a well in the center & pour in the milk, egg, flaxseed and melted butter- mix until smooth.

Do your thing making the pancakes (non-stick griddle or lightly oil the pan) using approx 1/4 Cup for each pancake. Flip and serve!  Serving with real fruit and/or Maple Syrup is the healthiest option.  Second healthiest- a light version of syrup such as Log Cabin Light.   

Why the Flax?
Flax seed has added fiber.  Just two tablespoons of flaxseed meal adds an additional 4 grams of fiber. Flaxseed also contains lignans, a natural antioxidant.  The lignans in flaxseed can maintain breast and colon health and just 2 tablespoons of flaxseed are equal to the amount of lignans in 30 cups of fresh broccoli- imagine feeding that much broccoli to your kids-dreamy (eh hem…or gassy!)  Flax-seed also is the plant version of omega-3s called alpha-linolenic acid- just 2 Tablespoons of flaxseed meal contains 2400 milligams of omega-3. Flaxseed also has a mild nutty flavor- I find it doesn’t change the flavor of your pancakes too much in this recipe.

Note:  Pancakes don’t have to be served for breakfast!  And the extras can be frozen and reheated in the microwave or toaster.

Another thing I do so I am not rushing around in the mornings is mix the dry ingredients together the night before and put them in a large zip lock bag.  Then, you just need to add the Milk, Vanilla, egg and butter in the morning.
