Here is heart healthy recipe for a quick and easy delicious meal-Whole Wheat Citrus Salmon Tortillas.

Whole Wheat Salmon Tortillas- Quick & Healthy Meal

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 2-8 Wraps depending on how full your wraps will be, easy to double and triple

Fat per serving: Not low fat, but heart healthy fats only.

This is a heart healthy recipe- Omega 3 fats and monounsaturated fat from the Avocado.

I served this with a delicious Fruit Smoothie. It's a perfect recipe for summer entertaining, but delicious all times of the year.

Have your guests make their own tortillas and fun for kids too!

Ingredients

  • Whole Wheat Tortillas (2--6)
  • 2-4 Pieces 6-8 oz of Wild Salmon (you can buy fresh or frozen)
  • 1 Orange or Tangerine
  • 2 Tbs or Agave Nectar or Honey
  • 1 Tbs Lite Soy Sauce
  • Butter Leaf Lettuce (you could use any green leafy veggie like spinach too)
  • Heirloom Cherry Tomatoes
  • Finely Chopped up Carrots
  • Cheddar Cheese (I used an Aged Cheddar by Cabot of Vermont)
  • Jalapeno Pepper (optional)
  • Fresh Cilantro
  • Avocado
  • Salt (taste preference)
  • Toothpicks

Instructions

  1. Drizzle salmon with Lite soy sauce, then Agave or Honey
  2. Squeeze 1/2 of Orange so juice drizzles over the salmon
  3. Place the Salmon on Baking Pan (skin side down) OR on Foil if Grilling. You can also line Baking Pan with foil for easier clean up later.
  4. Bake at 350 degrees for approximately 12-18 minutes or Grill on Medium heat for 10-12
  5. OR I used my Advantium Oven- Go to Seafood, Choose salmon.
  6. Check to see if done around 10 minutes as all fish is cut differently- fish will flake with fork. Recipe Best at Med-Med Rare. Over cooked salmon is dry.
  7. While Fish is cooking Cut up Tomatoes and Jalapeno Pepper
  8. Chop Carrots
  9. Wash, Dry and pull apart lettuce
  10. Grate Cheddar Cheese
  11. Peel and cut up Avocado- mash if desired
  12. Warm Tortillas in microwave for 20-30 seconds
  13. When Salmon is done, pull Salmon into pieces leaving skin on Pan or Foil
  14. Make your Tortilla! Lay down lettuce, fill with carrots, tomatoes, jalapeno, cilantro, avocado, salmon
  15. Sprinkle a LITTLE salt- if desired
  16. Sprinkle cheese
  17. Roll up, fold over bottom end, garnish with an Orange Slice
  18. Enjoy! Mmm...

Notes

Great for kids as they can have a great time building their own Tortilla. Serve with a fruit smoothie.

Or Goes great with a glass of Pinot Grigio.
